Slow-cooked chicken in a tomato-coconut-butter sauce. A Filipino-friendly take on butter chicken, built on Hunt's Tomato Sauce and Coco Mama Coconut Milk. Base recipe yields 3 servings and scales clean to canteen and catering volume.

PROCEDURE

How to Cook It.

  1. Marinate the chicken

    Combine yogurt, calamansi juice, garam masala, garlic, ginger, turmeric, and salt in a bowl. Add the chicken and marinate for at least 30 minutes (or up to overnight, refrigerated).

  2. Sear the chicken

    Heat coconut oil in a heavy pan over medium-high heat. Cook the marinated chicken in batches until golden on both sides, about 3 to 4 minutes per side. Set aside.

  3. Bloom the spices

    In the same pan, melt the butter and saute onion, garlic, and ginger until fragrant. Add garam masala, turmeric, ground cumin, and chili powder. Toast the spices for 30 seconds.

  4. Build the tomato base

    Pour in Hunt's Tomato Sauce and water. Simmer for 5 minutes, stirring occasionally, to let the sauce reduce slightly.

  5. Finish with coconut milk

    Stir in Coco Mama Coconut Milk and salt. Return the chicken to the pan and simmer for 10 to 15 minutes, until the sauce thickens and the chicken is fully cooked through.

  6. Plate and garnish

    Garnish with chopped cilantro and serve hot with steamed rice or pandesal.
